Coca-Cola Cake

This cake was popular in the '60s, and it's still good for a reason. Exceptionally moist and chocolate-y. The cake has three components - dry mix, wet mix, and boiled mix. The frosting has two – dry mix and boiled mix. Put nuts in both cake and frosting or in only one.

Cake

Mix and set aside:

2 c flour
2 c sugar
1/2 t salt
1 t baking soda
1 1/2 c miniature marshmallows
1/2 c chopped walnuts (or pecans)

Beat and set aside:

1/2 c buttermilk
2 eggs

Bring to a boil:

1/2 c butter or margarine (1 stick = 1/4 pound)
1/2 c cooking oil (if you use olive oil, make sure it is
"very light," as "virgin" or "extra virgin" has too strong a taste for this use) 1/4 c cocoa powder
1 c Coca-Cola

Add 1 t baking soda to buttermilk mixture.

Pour boiled mixture over dry mixture. Add buttermilk mixture. Mix well.

Spray Pam in a 13"x9" pan or Bundt pan. Bake at 350 for 40 minutes or until toothpick comes out pretty clean.

Boiled Frosting

Bring to a boil:

1/2 butter or margarine
1/4 c cocoa powder
1/4 c + 2 T Coca-Cola (6 T)

Mix in 1 t vanilla and 1/4 to 1/2 c nuts (whatever looks about right)

Pour boiled mix over 1 box powdered sugar. I find that half this frosting recipe is enough, but you should make the full recipe first to see if you prefer this.
